Job description

The Pastry Cook/Cake Decorator position is an integral part of the team! This person makes, bakes, and decorates everything from French macarons to cinnamon rolls to bespoke cakes and everything in between.

This position reports to the owner(s)/manager(s) and has direct responsibility of ensuring all production activities are performed with attention to the highest standards of food quality and implementing best practices set forth by the owner(s) as well as other duties, which include but are not limited to:

  • Implement company standards for formulas, scaling weights, pan sizes, bag sizes, bake times, and all production control processes for all products
  • Measure ingredients, kneading dough, mixing by hand or with kitchen tools, taking items in and out of the oven, and placing goods on cooling racks
  • Plan and coordinate use of manpower, ingredients and equipment to ensure efficient production of consistent quality products
  • Assemble, fill, and finish/decorate cakes, tarts, pastries, and special-order items
  • Build, ice, and decorate cakes and other bakery items following standard procedures
  • Maintain raw goods/product inventory, prioritize production lists, and recommend adjustments as needed
  • Maintain a clean and organized work environment
  • Be committed to maintaining operational, merchandising and quality standards
  • Clean and restock work areas, empty the garbage and compost, and clean and sanitize equipment and utensils
  • Maintaining an effective – positive, amicable, upbeat and “smile first” — customer service orientation
  • Answer all customer questions if called upon (to best of ability)
  • Work and communicate effectively as a part of a fun, high-energy team
  • Adhere to all food safety regulations and quality controls
  • Meet deadlines for pickups/deliveries
  • Other duties as required
  • Work directly with and receive support from the owner(s)/manager(s)

Skill Requirements

  • Efficient cake and pastry decorating skills, including piping techniques
  • Understand colour theory as it pertains to blending buttercream colours and complementing palettes
  • Ability to apply proper technique when using all icings including Swiss meringue buttercream, American buttercream, ganache, cream cheese icing, whipped cream/Chantilly, and all varieties of meringue
  • Ability to follow recipes, directions, and procedures; excellent organizational, time-management, interpersonal and analytical skills
  • Excellent attention to detail
  • Clear and effective communication style, both written and oral.
  • Good judgment and decision-making abilities while communicating with customers and team members
  • Ability to learn manual and automated systems/tools
  • Skilled at working in a fast-paced environment while maintaining priorities, a sense of urgency, and a high level of performance
  • Basic understanding of bakery work flow, prioritizing work, and handling multiple concurrent tasks
  • Ability to read, write, perform basic arithmetic calculations (including using baker’s percentages)

Experience Requirements

  • Prior experience (at least 1 year) within a high-level professional kitchen that uses scratch-baking methods
  • Prior experience producing cakes, cookies, cupcakes
  • Prior experience producing French macarons on a large scale
  • Prior experience with yeasted breads (both sweet and savoury)
  • Prior experience with pie dough and pie fillings (both sweet and savoury)

All experience must come from a professional kitchen

Physical Requirements/Working Conditions

  • Ability to walk and/or stand for extended periods (6-8 hours)
  • Ability to lift and carry 20kg for at least 30 feet (no stairs)
  • Ability to carry lighter loads up and down stairs
  • Work requires the following motions: bending, twisting, squatting, and reaching
  • Hand use: single grasping, fine manipulation, pushing, and pulling
  • Ability to work a flexible schedule including weekends and holidays as needed
  • Ability to use tools and equipment, including knives, mixers, and other machinery
  • May require use of ladders

Education Requirements

  • Baking and pastry arts diploma/certificate or equivalent experience
  • Prior experience in a high-level professional kitchen is required
  • Current Food Handler Certificate required
